A long, dark, slow, and crazy fermentation has occurred! This strong plum-coloured beer has been in our oak foeder for over a year. In that time, it has picked up a lot of character from the resident microbes, with funky and tart notes sailing over a full, sweet body. Not content with just that "house character" we transferred it to stainless and added dates and plums... and left it a few months more. Finally, we bottled it with champagne yeast for refermentation.

The result is a special beer: fruity, funky, sweet, tart, complex. Alc. 9.5% Vol.
