
The original Holley-Paquette beer, conceived in a cottage in 2008, brewed that same year in the middle of Massachusetts, Jack D'Or led us to heady days with our last brewing project, Pretty Things. Always our anchor, always our brewing companion, Jack D'Or the friendly barleycorn ghost has accompanied us through great times, silly hard work brewdays, dark nights and great expeditions across oceans and countries, eventually settling down with us again in our shed in Attercliffe, where he installed himself in the mashtun and got to work...
Anyway, FINALLY after 15 years, Jack D'Or is bottle refermented! This beer was fermented initially in stainless steel tanks with our dual strain saison yeast blend and then bottled with some sugar and fresh yeast, and left to gently referment in the bottle. And now it's ready!
Golden and spicily aromatic, the beer pours with a beautiful voluminous head and takes you on a journey into the agricultural world of beer and brewing.
